Mexico’s best offering to the world has been innumerable versions of tacos. This light and fresh snack which once labeled as ‘street food’ has now become an exotic insignia of Mexico.
Made from fresh corn tortillas, filled with veggies, beans, and hot sauces, taco serves a number of flavours in serving. However, globally this simple recipe has been reinterpreted in a variety of ways. Instead of kidney beans, meat lovers can use fresh meat or even seafood. From stuffing fresh tofu to fruits, anything can be used.

Ingredients
- 5 cups of maize flour
- 6 tablespoons of plain flour
- 1 tablespoon of olive oil
- Oil for frying
- 4 cups of kidney beans
- 2 tbsp of salt
- 1 tsp of black pepper
- 1 chopped onion
- 2 tomatoes, finely chopped
- 2 avocados
- ½ chili powder
- A piece of ginger
- 4 garlic cloves
- 1 tsp of cumin seeds
- 2 cups of tomato puree
- A bunch of coriander and mint leaves

- To create crispy fresh tortilla base for taco, mix maize flour and plain flour in a bowl and mix well.
- Add water and knead well.
- Once the dough is ready divide it into smaller proportions.
- With a rolling pin create small circular flat pieces and then deep fry.
- Make sure while frying the tortillas don’t stick to each other.
- Once you are done, freeze these tortillas.
- For the filling, boil the kidney beans.
- Add chopped tomatoes, tomato puree and all the other fresh veggies.
- Let the mixture dry.
- Now scoop out a few clean portions of avocado.
- Lay the mixture on avocados.
- To garnish you can use mint or coriander leaves.
- In case you are a fan of feta cheese, you can also add a bit feta pieces.
- As an accompaniment, nothing works like a fresh green mint sauce or a lime piece.
