How To Make Masala Chai At Home?

Take your favourite spices like cinnamon sticks, cloves, cardamom pods, and peppercorns and crush them slightly. Make sure that you are not pulverising them into a powder and just slightly crushing them into small pieces. Then, add these crushed spices to a saucepan, pour some water and grated (or sliced) ginger. Bring everything to a boil over high heat. If you don’t want the ginger’s taste to dominate the chai, reduce the amount of ginger and slice instead of grating. Now, reduce the heat slightly to medium/medium-low and maintain a simmer for 15 minutes or until the water reduces by about one-third. Then, add tea powder/leaves and milk and lower the heat to low. Cover it with a lid and let it cook for about five minutes to allow the flavours to meld. Then, turn off the heat and let steep for five more minutes (covered) or longer for deeper flavour. Add sugar to taste. Strain through a fine mesh strainer before serving and enjoy!

Ingredients

  • 1 whole cinnamon stick
  • 6-8 green cardamom pods
  • 1 teaspoon of whole black peppercorns
  • 3-4 whole cloves
  • 2 1/2 cups water
  • 2 tablespoons of grated/sliced ginger
  • 3 tablespoons of tea powder/leaves
  • 2 cups of milk
  • 2 tablespoons of sugar

Step

  • Step 1 :

    Start with slightly crushing the spices, one cinnamon stick, 6-8 green cardamom pods, one teaspoon of whole black peppercorns, and 3-4 whole cloves.

  • Step 2 :

    Put the crushed spices in a saucepan and add 2 1/2 cups of water and two tablespoons of grated/sliced ginger. Let the mixture boil on high heat and then turn the heat to medium/medium-low. Let it boil for about 15 minutes as it reduces to one-third of its original.

  • Step 3 :

    Next, add three tablespoons of tea leaves/powder and two cups of milk. Cover the pan and let it cook over low heat for five minutes.

  • Step 4 :

    Then, take it off the heat and let it steep for five more minutes to let the flavours blend properly.

  • Step 5 :

    Add sugar as per your preference, strain, and enjoy!
