Masalas are now commercially available in supermarkets too, but nothing can beat home-made masalas. Freshly blended home-made spices give a special flavour to your food that'll force people to lick their fingers. Don’t believe us? Try it yourself. Here are some masala recipes for the delicacies that are commonly cooked on a day-to-day basis. All you need is your blender and few spices, and voila, your home-made masalas are ready!
Achari Masala
This coarsely blended masala gives you a slightly tangy, bu=itter and salty taste at the same time.
Ingredients
- 9 Dried red chilies
- ½ tbsp coriander seeds
- 3 tbsp fennel seeds
- 3 tbsp mustard seeds
- 3 tbsp cumin seeds
- 1 tsp fenugreek seeds
- 1 tsp nigella seeds
- ½ tsp carom seeds
- 3 tbsp salt
- 1 tsp Turmeric Powder
- ¼ tsp asafetida
- 1 ½ dry mango powder
Method
- Take a heavy bottomed non-stick pan, dry roast red chilies, coriander seeds, onion seeds, fennel seeds, mustard seeds, cumin seeds, fenugreek seeds, and carom seeds till light brown. Keep it aside.
- Blend with remaining ingredients to make a coarsely ground powder.
- Store in an airtight container.
Garam Masala
Ingredients
- 150 gm cumin seeds
- 50 gm black cardamom seeds
- 25 gm cinnamon
- 25 gm cloves
- 25 gm peppercorns
- 4 bay leaves
Method
- Keep all the ingredients under the sunlight to get rid of moisture.
- Grind ingredients to make a coarsely ground powder.
- Store in an airtight jar.
Curry Powder Mix
There are a thousand ways you can make curry powder, using a thousand different ingredients. But this one is pretty simple.
Ingredients
- 2 tbsp. turmeric
- 1 1/2 tbsp ground coriander
- 1 tbsp ground cumin
- 2 tsp. cinnamon
- 2 tsp. ground ginger
- 1 1/2 tsp. mustard powder
- 1 tsp. ground cardamom
- 1 tsp. ground cloves
- 1/2 tsp. ground black pepper
- 1/4 tsp. cayenne pepper
Method
- Mix all the ingredients and blend them in a blender.
- Store in a dry airtight jar.
Tandoori Masala
Use two teaspoons of this tandoori seasoning and make a yummy tandoori at home.
Ingredients
- 1/4 cup dried, powdered ginger
- 1/4 cup dried, powdered garlic
- 2 Tbsp black pepper
- 2 Tbsp chaat masala
- 1/4 cup garam masala
- 1/4 cup powdered red pepper
- 1/4 cup kastoori methi
- 3/4 cup salt
- 1/4 cup dried, powdered onion
- 1 tsp powdered red colour (optional)
Method
- Mix all the ingredients in a bowl.
- Now blend them in a blender to make a coarsely powder.
- Store in an airtight container.
Seasoned Salt
Another all-purpose seasoning that will go with anything savory: salad, burgers, chicken and even soups!
Ingredients
- 1/2 cup kosher salt
- 1/4 cup ground black pepper
- 2 tbsp. paprika
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
Method
- Mix all the ingredients and blend them in a blender.
- Store in an airtight jar.
Chili Powder Mix
Why you should buy chili powder from the market when you can make your own?
Ingredients
- 3 tbsp. ground cumin
- 2 tbsp. garlic powder
- 1 tbsp. cayenne pepper
- 1 tbsp. paprika
- 1 tbsp. ground oregano
Method
- Mix all the ingredients in a bowl.
- Blend them in a blender and store in an airtight jar.
