Who doesn't love desserts? Especially, when it's a creamy frozen treat like kulfis! Despite having so many flavoured ice creams available in the market, Kulfi holds a special place in our heart.  They are made from boiling milk for hours till it gets reduced to two-thirds and gets thick like rabri. It may take a lot of time but the results are worth it. So, for all those Kulfi lovers, satisfy your cravings by making your own kulfi at home. What more you could ask for to ease the heat?

Almond Malai Kulfi

This ain’t your grandma recipe but we bet you’ll surely love it.

Ingredients

  • 1 cup almonds (blanched and ground)
  • 1 1/2 cup condensed milk
  • 6 tbsp cream
  • 10-15 chopped pistachio
  • ¼ cup milk
  • A pinch of saffron

Directions

  • Take a mixer. 
  • Blend condensed milk, almonds and cream in it together.
  • Soak saffron in a teaspoon of water for 15 minutes. Add the mix into the blended mixture.
  • Toast some pistachio and chop them coarsely. Add pistachio into it and blend them well.
  • Set the mixture in a matki or kulfi molds and cover it with aluminum foil/ butter paper.
  • Place molds in the freezer for 8 to 9 hours. 
  • Garnish the kulfis with chopped nuts and serve!

Kesar Pista Kulfi

Pista, cream, milk and a touch of kesar will make this creamy kulfi more delicious!

Ingredients

  • 1-liter full cream milk
  • ½ cup of sugar
  • ¼ tsp saffron
  • 4-5 Green cardamoms
  • 12-15 Almonds
  • 2 tbsp pistachios

Directions

  • In a heavy-bottomed saucepan, boil the milk over medium heat, while continuously stirring it.
  • Boil it until it reduces to half. It’ll take around 30-40 minutes.
  • When milk turns into beige-cream colour, add the sugar and saffron. Mix well.
  • Bring the milk to a boil again and simmer for another minute or two.
  • Now, turn off the heat and add eliachi and chopped nuts in it. Mix it well.
  • Set the mixture in matkis or kulfi molds and refrigerate. Cover the top of molds with aluminum foil or butter paper.
  • Garnish kulfis with nuts and enjoy!

Mango Kulfis

Imagine the oohs and aahs you’ll get when you serve this sinful dessert, with a twist of mangoes, to your adoring friends and family.

Ingredients

  • 400g sweetened condensed milk
  • ½ cup mango pulp
  • ½ cup cream
  • 8-10 blanched almonds

Directions

  • In a blender, blend cream, condensed milk, and mango pulp together.
  • Now, add chopped nuts in it. Beat to blend well.
  • Set the mixture in matkis or kulfi molds and refrigerate. Cover the top of molds with aluminum foil or butter paper.
  • Freeze it for 8 to 9 hours.
  • To serve, take the mold out of the freezer and prise the kulfi out with the help of a knife, into serving bowls.
  • Garnish with nuts and serve!
