Karnataka's cuisine, like any other Indian cuisine, is interesting, yummy and some are super low on calories as well! On my visit there I came across some really cool delicious dishes that worked well for me in breakfast and for lunch as well. Here I would love to share with you this rice-based breakfast item unique to the state of Karnataka. Called Akki rotti, which literally means "rice bread" is made of rice flour which is mixed with salt and water and kneaded well till the dough gets soft. You can spruce it up with different vegetables as well. For those who did not know, the cuisine of Karnataka is one of the oldest surviving cuisines and traces its origin to the Iron Age.

Plain Akki Roti

Ingredients

  • Salt as per your taste
  • 1/2 tsp cooking oil
  • 1 cup rice flour
  • 1.25 - 1.5 cup water

Method

  • Mix water, salt, and oil in a pan and keep it for boiling.
  • Next, when the water starts boiling add in rice flour, give a quick mix and switch off the stove.
  • After switching off the stove, mix it well using a flat spatula, close the lid and keep it aside.
  • Once the dough is warm, knead it very well.
  • Squeeze, punch, fold and knead it for five minutes.
  • Better you knead, easy to make rotis.
  • Once you are done with the kneading, dust your fingers, pinch and take the big lemon sized dough.
  • Again knead the dough using palms and make a soft flat ball.
  • Dust the flour and roll the flat balls into thin rotis.
  • Please note you have to be gentle while making this roti.
  • Heat the tava and transfer the rolled rotti or roti over the hot pan.
  • Apply water on the roti using a clean and wet cloth.
  • Once you start seeing the small bubbles, flip the roti and cook on the other side.
  • Alternately, you can cook the roti directly over the flame. To do that, first cook the rotis over the pan for small duration and then transfer it directly over the flame, cook on both sides.

Masala Akki Roti

Ingredients

  • 2 cups Rice flour
  • 1/4 cup grated fresh coconut
  • 2 chopped green chillies
  • 1/2 teaspoon cumin seeds
  • 1grated carrot
  • 1 chopped capsicum
  • 1/4 cup chopped dill leaves
  • 1/4 cup chopped cabbage
  • 1 chopped onion
  • 1 inch chopped ginger
  • 1/4 teaspoon hing
  • Saltto taste
  • Cooking oilto cook

Method

  • Add rice flour, carrots, cabbage, capsicum, onion, coconut, cumin seeds, green chillies, ginger, asafoetida and salt to taste into a large mixing bowl. Onions have a lot of health benefits as well so do add this ingredient in your roti.
  • Mix all the ingredients well and then knead the dough adding little warm water at a time. The dough should be soft.
  • We will require around 1 cup of water to knead the dough.
  • Once the dough comes to shape cover and allow Masala Akki Roti dough to rest for 10-15 mins.
  • After 15 minutes grease your palm and make large lemon size portions of the akki roti dough and keep aside.
  • Preheat a non stick tawa or roti pan.
  • Now wet a muslin cloth with water or grease a plantain leaf.
  • Grease your palm and place a portion of the dough at the center of the cloth.
  • Using your fingers pat the dough to make circular discs of medium thickness.
  • Make three small holes in the akki roti for even cooking of the akki roti.
  • Preheat a skillet over medium heat and grease the skillet.
  • Carefully invert the akki roti onto the preheated pan and peel out the cloth or the leaf.
  • Cook the Masala Akki Roti on medium heat for a few seconds. Flip the roti and drizzle a teaspoon of oil around the roti and cook it on both sides until brown spots appear.
  • Once done, remove Masala Akki Roti from heat and serve warm.
  • Serve with chutney and ghee for a breakfast or an evening tea time snack along with a hot cup of Filter Coffee or Masala Chai.
