Vegetable Idli

This idli dish is mildly spicey and is made with idli batter, lots of seasonal vegetables and chopped beans.

Ingredients:

  • 2 cup idli batter
  • 1/4 cup chopped bean
  • 1/4 cup grated carrot
  • 1 1/2 tsp salt

For Tempering:

  • 2 tsp refined oil
  • 1/4 tsp cumin seeds
  • 1/4 tsp mustard seeds
  • 10 curry leaves

Method:

  • Grease the idli moulds with a bit of oil and set aside.
  • Mix the idli batter with salt.
  • To prepare the tempering, heat oil in a pan over a moderate flame and add the mustard seeds to it.
  • Allow them to splutter.
  • Then add the cumin seeds and the curry leaves.
  • Once done, transfer the tempering a bowl and keep it aside.
  • Pour the idli batter into the prepared moulds.
  • Top with the tempering and the vegetables and steam for about 10-12 minutes or until the idlis are light to touch.
  • Once done, serve the scrumptious vegetable idlis with mint chutney or coconut chutney.

Stuffed Idli

A perfect breakfast dish, prepared with idli batter, sprouted moong, tomato ketchup, ginger, mint leaves and green chillies, this delicious dish will leave you wanting for more.

Ingredients:

  • 1 kg idli batter
  • 8 tbsp boiled sprouted moong
  • 4 pieces green chillies
  • 1 handful mint leaves
  • 2 tsp ginger
  • 4 tbsp tomato ketchup
  • Salt as required

Method:

  • To start with, add the idli batter in a bowl.
  • Take a chopping board and chop green chillies and ginger.
  • Now grind the mint leaves to a smooth paste.
  • In another bowl, add ginger, green chillies, tomato ketchup, sprouted moong dal, and two tsp of mint paste.
  • Mix them nicely.
  • Grease the idli plates with oil and fill half of each of the plates with the batter.
  • Now fill all the moulds with one spoon of filling and fill the remaining space with batter.
  • Steam them for 10 minutes.
  • Check if the idlis are soft enough to be had then serve hot with chutney.

Rice and Moong Dal Idli

This recipe is prepared by mixing rice, moong dal, carrot and spring onions.

Ingredients:

  • 1 cup green moong dal
  • 1 cup rice
  • 2 tsp fruit salt
  • 1 cup spring onions
  • Salt as required
  • 1 cup grated carrot

Method:

  • To start with, take a bowl and add enough water in it to soak rice.
  • Similarly soak moong dal in a bowl also for about 5 hours.
  • Take a chopping board and chop green onion whites and greens on it.
  • Take a blender and add rice along with moong dal in it.
  • Blend them to a smooth paste using a little water.
  • Take a bowl and pour the batter into it, add spring onions, grated carrots, salt to taste and mix well.
  • Add sea salt and a tablespoon of water to the mixture. Mix gently.
  • Grease the idli moulds and pour the batter into each of them.
  • Steam it for about 8 to 10 minutes till the idlis are completely cooked.
  • Let it cool and de-mould it. If you want, you can garnish the idli with cashews, curry leaves and grated carrot. Idlis are best served with green chutney.

Rava Idli Microwave

Ingredients:

  • 1 cup roasted semolina
  • 2 medium minced capsicum (green pepper)
  • 15 coriander leaves
  • 2 chopped green chilli
  • 1/2 tbsp salt
  • 1/2 cup water
  • 1 cup beaten yoghurt (curd)
  • 1 medium minced carrot
  • 1 tbsp extra virgin olive oil
  • 1 inch grated ginger
  • 1/2 tsp baking soda

Method:

  • For making this easy breakfast recipe, put curd in a bowl and mix semolina (sooji) in it.
  • Add 1/2 cup water in the batter and maintain a thick consistency.
  • While stirring, add salt, ginger paste, green coriander and chopped green chilli in the batter.
  • After mixing it well, add all the vegetables.
  • You can either add chopped veggies or can mince them completely.
  • Keep aside the batter for 10 minutes, until it gets fluffy.
  • After 10 minutes, add baking soda and mix it well. Your idli batter is prepared.

Oats Idli

Made with oats, semolina, carrot, peas, yogurt and a melange of spices, this idli breakfast is extremely nutritious.

Ingredients:

  • 2 1/2 cup oats
  • 1/2 tsp baking soda
  • 3 pinches salt
  • 1 tsp green chilli
  • 1 tsp asafoetida
  • 2 tbsp mustard seeds
  • 2 1/2 cup semolina
  • 6 tbsp peas
  • 1 handful coriander leaves
  • 1 1/2 cup yoghurt (curd)
  • 6 tbsp carrot
  • 1/2 cup sunflower oil
  • 420 ml buttermilk

Method:

  • Wash and chop all the vegetables, keep aside.
  • Dry roast the oats in a pan over medium flame for 3 to 5 minutes.
  • Remove, cool and grind to a coarse or smooth powder.
  • After the oats are roasted, transfer them in a bowl and keep aside.
  • Now, in the same pan, add semolina and dry roast until golden and remove from the burner.
  • Once the semolina is cool, mix it with roasted oats.
  • Next, put a kadhai over medium flame and heat a little oil in it.
  • Add the mustard seeds and let it temper for 30 seconds.
  • Add chopped vegetable carrot, green peas, green chilli paste and saute for a minute or two.
  • Add this to the oats mixture.
  • Add salt, asafoetida, coriander leaves, cooking soda, curd and buttermilk.
  • Mix well to an idli batter consistency. Cover and keep aside for a few minutes.
  • Pour into greased idli plates and steam cook until done.
  • Remove and serve hot with chutney or sambhar.
