Winter brings with it a ton of ailments such as a sore throat, cold, flu and other viruses; making it even more important for your diet to be able to overcome these illnesses. Eating a healthy diet is recommended for the entire year, but you need extra care during the winter season. Jaggery, nuts and seeds are advised for their health benefits which includes a reduction in cholesterol, improvement in digestion, controlling blood sugar levels, heart diseases, arthritis and diabetes. So, here we have for you three special jaggery recipes that are quick and easy to make.
Sesame ladoo

Ingredients:
- 100 gms of seedless dates
- 15 gms of sesame seeds
- 20 almonds
- 2 pinches of cardamom powder
- 1 tsp of ghee
- 4 tsp of jaggery syrup
- 1 tsp of rice flour
- Salt as per taste
- Saffron (optional)
Method:
Step 1: Take the seedless dates with one cup of water to make a smooth syrup. Grind it till it is in a puree form.
Step 2: In a pan, add the ghee, rice flour and sesame seeds, and roast them on a slow flame.
Step 3: Add the dates puree and cardamom powder in the pan once all the ingredients are nicely roasted.
Step 4: Cook this mixture for about five minutes.
Step 5: Add the jaggery syrup.
Step 6: Once the aroma releases, take it off the heat and put it on a plate. Let it cool down for half an hour, then roll it into small round ladoos.
You can store these ladoos in an airtight container for about two days at room temperature or in the fridge for up to two weeks.

Sakkarai Pongal

Sakkarai Pongal is one of the well-known recipes of South India’s harvest festival Pongal. This delicious dish is prepared with jaggery to give its sweet taste.
Ingredients:
- 1 cup of rice
- ¼ cup of moong dal
- 1 litre of milk
- ¼ cup of cashews
- ½ cup of dry fruits
- ½ cup of jaggery
- 1 tbsp of ghee
Method:
Step 1: Wash and soak the rice and moong dal separately.
Step 2: Heat the milk in a vessel. Add the rice and mix it well till the milk starts reducing.
Step 3: In a pan, add the moong dal, ghee, cashews and dry fruits, and heat it. Saute till the dal turns golden brown.
Step 4: Continue cooking this mixture while adding it to the rice and milk, and make a syrup of the jaggery and water in another pan.
Step 5: Lower the heat and add the jaggery syrup when the mixture has thickened.
Step 6: Stir it well and reduce the heat. Let it simmer for four to five minutes.
Your Sakkarai Pongal dish is cooked! Garnish it with roasted nuts and fruits.

Jaggery Gajak
This jaggery gajak is a healthy North Indian delicacy which can be enjoyed as a snack for the winter season.
Ingredients:
- 6 tbsp of ghee
- 500 gms of jaggery
- 4 cups of raw peanuts
- 6 tbsp of fennel seeds
Method:
Step 1: In a nonstick pan, heat the ghee on a medium flame. Lower the heat and add jaggery to it. Heat it until it melts and becomes golden. Add the fennel seeds (saunf) after that.
Step 2: In another pan, add ghee and roast peanuts in it. Then mix the roasted peanuts into the jaggery mixture.
Step 3: Put some ghee on a foil sheet and place it on a flat surface. Spread the jaggery mixture on the sheet.
Step 5: Slice it into rectangular pieces and serve it once it cools down.
The jaggery gajak will get hard once it cools down and is ready to eat!
