1. Begin by cleaning and patting dry the fish fillets. Ensure that there are no bones left and the fillets are cut into medium-sized pieces.

2. In a medium-sized bowl, prepare the masala for the fish fry. Combine turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala, lemon juice, and a pinch of salt. Then mix everything well. Add a little water to form a thick paste. The consistency should be such that it coats the fish well without being too runny. Let it sit for about 15 minutes.

3. After it is done, apply the prepared masala paste evenly over each fillet. Make sure the fish is well coated.

4. In a frying pan, heat enough oil over medium heat. You need enough oil to shallow fry the fish, so ensure the pan is adequately coated but not overloaded.

5. Once the oil is hot, carefully place the fish fillets in the pan. Do not overcrowd the pan; fry the fish in batches if necessary.

6. Fry the fillets for about 3-4 minutes on each side, or until they are golden brown and crispy.

7. Once fried, remove the fish from the pan and place them on some tissue paper to drain excess oil.
