Shahi Tukda is a popular North Indian dessert. It is a famous delight during festivals and can be easily prepared at home. This delicious dessert is made by deep-frying the bread slices in ghee and then slathering with a thick mixture of condensed milk (or rabri) and nuts. Shahi Tukda is made by deep-frying the bread slices in ghee and then soaking them in flavoured sugar syrup. These pieces are topped with rabri and chopped nuts.
To prepare this sweet delight, boil water in a saucepan. Once the water comes to a boil, add sugar and saffron and let it boil, till the syrup achieves two string consistency. Once the sugar syrup turns a little thick. Turn off the flame and keep aside.
Take another pan, boil the milk in medium flame until the milk is reduced to about 1/4th of its original quantity. While stirring it continuously, add cardamom powder, sugar syrup and let it cook for another 5 minutes.
After 5 minutes, remove the pan from the flame and keep your rabri aside.
Now, take the bread slices and cut their sides and slice it as two triangles. Heat oil in a pan over medium flame and deep-dry the bread until they turn golden brown.
Once the bread slices are fried, dip them in the sugar syrup for a few seconds, and arrange the pieces in a serving dish, in one layer.
Pour the prepared rabri over the bread slices and garnish with the chopped nuts or silver vark. Bon Appétit!
