How To Make Kumror Chokka
- Soak the chickpeas in enough water to cover them overnight or for 6-7 hours. Drain and wash the chickpeas 2-3 times under running water. Pressure cook with water and some salt for 6-8 whistles. Drain the chickpeas when the pressure is gone and set them aside.
- Peel and chop the pumpkin and potatoes into small cubes. Wash, then set aside.
- Now take a medium pan of heat oil and add the bay leaves, 1 halved dry red chilli, asafoetida, and cumin seeds for tempering.
- Now one by one add the cumin powder, coriander powder, turmeric powder, ginger paste, and salt. Now mix on a medium heat and saute it for a minute.
- Add the chopped potatoes, pumpkin, boiled chickpeas, and some green chillies to it. Stir mixture often while cooking for 5 minutes at medium heat, uncovered.
- Add 1/2 cup of water to this. Mix thoroughly, cover, and simmer until the veggies are tender. Stir the mixture between every two or three times.
- Now add sugar, ghee, and garam masala powder. Gently combine, then cook uncovered for a further 2-3 minutes.
- Garnish your Kumror Chokka dish with some coriander leaves and its ready. Serve hot with rice and dal or luchi.
