1. Start by washing the spinach thoroughly under cold running water. Bring a large pot of water to a boil. Add a pinch of salt to the water. Once the water is boiling, add the spinach and blanch for about 1-2 minutes until it’s wilted but still vibrant green. Don’t overcook; the spinach should remain tender and fresh.
2. Immediately transfer the blanched spinach to a bowl of iced water to stop the cooking process. This helps retain the bright green colour and keeps the spinach crisp. After cooling for a few minutes, drain the spinach thoroughly and gently squeeze out any excess water.
3. Gently squeeze the spinach to remove excess water and cut the spinach into 2-3 pieces with a knife.
4. In a bowl, put the drained spinach with toasted sesame oil, sesame seeds, soy sauce, green onion, and minced garlic. Mix well to combine all the ingredients with your hands.
5. Gently toss the spinach with the dressing until it’s evenly coated. Be careful not to tear the leaves.
6. Taste everything, and give it a final gentle toss.
7. Sprinkle some sesame seeds and it is ready to serve.

How to make this healthy Korean Spinach Salad at home
Wash spinach thoroughly and blanch in boiling water with a little salt. Make sure you do not overcook it.
Transfer spinach to cold water to stop cooking, once done then squeeze out excess water and cut into 2-3 pieces.
Then take a large bowl, and mix spinach with toasted sesame oil, sesame seeds, soy sauce, green onion, and minced garlic.
Now gently toss everything so that it is mixed well.
Sprinkle some sesame seeds and it is ready to serve.
