2. In a heavy-bottomed pan, heat ghee and add soaked rice. Fry the rice for 2-3 minutes on medium heat until slightly golden brown.

3. Add milk to the pan and let it come to a simmer. Keep stirring the mixture at medium heat to avoid burning the milk.

4. Cook it on a low flame for 10-15 minutes till the kheer thickens

5. Add the saffron strands to the milk and continue to stir the mixture.

6. Add sugar to the kheer and mix well. Now let the kheer cook for 5 minutes more.

7. Add cardamom powder and chopped pistachios to the kheer and mix well.

Ingredients

  • 1 cup Basmati rice (soaked for 30 minutes)
  • 4 cups of full-fat milk
  • 1/2 cup sugar
  • 1 tbsp ghee
  • 1/2 tsp cardamom powder
  • 1 tbsp chopped pistachios
  • 1 tbsp chopped almonds (optional)
  • A pinch of saffron strands

    Continue stirring the milk mixture after adding the saffron threads.

  • Step 5 :

    After mixing properly, add sugar to the kheer. Now, give the kheer 5 more minutes to cook.

    Now add the cardamom powder and chopped pistachios into the kheer.
