1. Start by cleaning the fish fillets thoroughly. Then in a mixing bowl, combine salt, ajwain, and hing, mixing well to coat the fish evenly. Add ginger and garlic paste, followed by turmeric powder, red chilli powder, besan (gram flour), and maida (all-purpose flour). Mix thoroughly to combine all the ingredients.
2. Coat the fish fillets evenly with this marinade. Let it sit for at least 30 minutes; longer marination (up to 2 hours) enhances the flavour.
3. In a deep frying pan, heat oil on medium-high heat. To check if the oil is hot enough, you can drop a small amount of batter into the oil; it should sizzle and rise to the surface.
