Bhutte Ka Kees

1. Take 4 cups of fresh corn and grate them using a grater. Be careful not to grate the kernels too hard as this will cause the skin to come off.

2. Heat ghee in a pan on a medium flame and add cumin seeds, and mustard seeds and wait till they start to pop. Then add turmeric powder, and red chilli powder to it.

3. Sauté the spices for a few seconds until they become fragrant.

4. Add the grated corn and mix well. Keep the pan on a low flame to ensure the spices do not burn. Continue to cook them until the oil is gone.

5. Add coriander powder, salt, and sugar. Stir well and continue to saute the corn mixture over a low flame.

6. Add 1 cup of milk and mix everything.

7. Let the mixture cook for 15-20 minutes on low heat until the milk is absorbed and the bhutte ka kees is thick.

8. Garnish the dish with grated coconut and chopped coriander.

9. You can also squeeze some lemon juice over the bowls for an extra tangy flavour.

Ingredients

  • 4 cups grated fresh corn
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 2 tsp coriander powder
  • 1 tsp sugar
  • 1 cup milk
  • 1 tbsp grated coconut
  • 1 tbsp lemon juice
  • 2 tbsp chopped coriander leaves
  • salt to taste

  • Step 1 :

    Stir in the shredded corn after adding it. To prevent the spices from burning, keep the pan on a low heat. Add the sugar, salt, and coriander powder after that. Keep stirring as you saute the corn mixture on low heat.

    Now add one cup of milk to it and mix it well. Allow the mixture to cook over low heat for 15 to 20 minutes, or until the bhutte ka kees thickens and the milk is absorbed.

  • Step 5 :

    Add chopped coriander and shredded coconut as garnishes to the snack. When it's done, squeeze in lemon juice for a tangy flavour.
