1. First, in a blender, add onions, tomatoes, green chillies, ginger, garlic, and cumin seeds. Blend everything into a smooth paste.

2. Next, take a mixing bowl and add potato cubes, cornflour, salt, and red chilli powder. Mix it well till the potato cubes are coated properly.

3. Now, heat oil in a deep frying pan, and once it’s hot, add the potato cubes. Fry them well until they turn golden brown. Drain the excess oil using a tissue and set it aside.

4. In a separate pan, heat oil on medium flame and add the masala paste. Stir it well and cook it for 2-3 minutes. Add turmeric powder, coriander powder, cumin powder, and garam masala powder. Mix everything well and cook for another 2-3 minutes.

5. Once the masala has cooked well, add kasuri methi and water. Mix everything and bring it to a boil.

6. Add the fried potato cubes to the masala and mix them gently. Cover the pan with a lid and let it cook for 5-7 minutes.

7. Finally, garnish the dish with fresh coriander leaves and serve hot with roti or paratha.

Ingredients

  • 1 cup chopped onion
  • 1 cup chopped tomato
  • 2-3 green chillies
  • 1-inch ginger piece
  • 4-5 garlic cloves
  • 1/2 tsp cumin seeds
  • 4-5 medium-sized potatoes
  • 2 tbsp cornflour
  • 1 tsp red chilli powder
  • Oil for frying
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1 tsp garam masala powder
  • 1 tsp kasuri methi
  • salt to taste
  • coriander leaves for garnish

  • Step 1 :

    Blend onions, tomatoes, green chillies, ginger, garlic, and cumin seeds into a smooth paste.

  • Step 2 :

    Next, add potato cubes, cornflour, salt, and red chilli powder to a mixing bowl. Mix it thoroughly until the potato cubes are evenly covered.

  • Step 3 :

    Now, heat the oil in a medium frying pan, then add the potato cubes once it is heated. They should be thoroughly fried till golden brown.

  • Step 4 :

    Heat oil over a medium temperature in a different pan before adding the paste. Cook it for a couple of minutes while stirring it well. Add the garam masala powder, cumin, coriander, and turmeric powders. After thoroughly combining everything, cook for a further two to three minutes.

  • Step 5 :

    After the masala has cooked well, add the water and kasuri methi. Everything should be combined well before boiling.

  • Step 6 :

    Gently stir in the cooked potato cubes with the masala. Put a cover on the pan and cook it for 5-7 minutes.

  • Step 7 :

    Serve the dish hot with paratha or roti.
