  • Take a thick pan and add ¾ cup of coriander seeds. Start roasting it on a low flame.
  • Keep roasting it until the spices start becoming fragrant and then keep it aside.
  • Next, add ½ cup of cumin and 1 tablespoon of caraway. Keep roasting these on a low flame. Once it turns fragrant, keep it aside.
  • Take 2 tablespoons of pepper and 3 pieces of dried red chilli and add it to the thick pan. Roast it till it is fragrant and the chilli turns crisp, and then keep it aside.
  • Next, add five pieces of star anise, 3-inch cinnamon, 2 pieces of mace, 5 pieces of black cardamom, 2 pieces of nutmeg, 3 teaspoons of cardamom, 1 tablespoon of clove, 2 teaspoons of fennel, and 5 pieces of bay leaves.
  • Keep roasting the spices till they become fragrant, but keep a close eye to ensure they don’t burn.
  • Cool all the spices, then add them all to a mixer and add 1 teaspoon of ginger powder.
  • Blend it all into a spice mix powder.

  • Step 1 :

    Start roasting ¾ cup of coriander seeds in a thick pan over medium flame.

  • Step 2 :

    Roast it till its aromatic and then keep it aside.

  • Step 3 :

    Next, roast ½ cup of cumin and 1 tablespoon of caraway till they become fragrant and then keep it aside.

  • Step 4 :

    Roast 2 tablespoons of pepper and 3 dried red chillies till it becomes fragrant and the chillies become crisp and keep it aside.

  • Step 5 :

    Roast add five pieces of star anise, 3-inch cinnamon, 2 pieces of mace, 5 pieces of black cardamom, 2 pieces of nutmeg, 3 teaspoons of cardamom, 1 tablespoon of clove, 2 teaspoons of fennel, and 5 pieces of bay leaves till its fragrant and then keep it aside.

  • Step 6 :

    Once all spices have cooled add them all to a blender.

  • Step 7 :

    Grind it all till it turns into a homemade garam masala powder.
