Story Of Gujiya
Gujiya is a sweet dish that is fondly eaten during Holi. Dishes similar to this one are eaten in Tibet and Turkey where pastry dough is stuffed with filling and deep fried. In India, this dish is believed to have originated from Vrindavan or Braj. This sweet is usually stuffed with khoya or dry fruits. The strong flavour of ghee is what makes this dessert so delicious to eat.

How To Make Gujiya With Suji (Semolina)?
From filling to dough, here are the simple steps of making suji (semolina) gujiya at home to treat your guests this Holi.
Preparing The Filling
- Take a pan with a heavy bottom and melt 1 tablespoon of ghee in it; once done, add suji to the pan.
- Saute the suji in ghee for a few minutes until it turns golden brown. Once it is cooked, add some grated coconut. Transfer the suji to a bowl once it is done.
- Now, add sugar, cardamom powder, nutmeg powder, khus khus (poppy seeds) and dry fruits. Mix them well and keep them aside to cool for some time
Preparing The Dough
- In a bowl, take maida, salt, and 2 tablespoons of ghee. Gradually add cold milk bit by bit to knead a firm dough.
- Divide the dough into equal parts, and roll them into flat rotis of about 2 inch diameter. Place these rotis on a gujiya mould and fill the centre with filling.
- Paste the edges of the rotis by applying some milk and closing the mould to seal them.
- Deep fry them in a pan full of oil or ghee until they turn golden brown. Once done, wipe out the oil by keeping them on tissue paper.
- Your suji gujiya is ready to serve!
