Ingredients

  • ½ cup of semolina (suji)
  • 3-4 boiled potatoes
  • and ¼ cup of finely chopped coriander leaves
  • 2-3 green chili
  • salt to taste
  • 1 cup of oil.

Step

  • Step 1 :

    Start by boiling 1 cup water in pot. Add 1 tablespoon oil, ½ teaspoon salt to it. Once the water is boiled turn off the flame and add ½ cup semolina to it. Let it sit for 2 to 3 minutes, you’ll see semolina will puff up.

  • Step 2 :

    In another larger bowl peel and mash boiled potatoes.

  • Step 3 :

    Add puffed semolina in it. Now also add other ingredients such as 1 teaspoon salt, add finely chopped green chilli, green coriander leaves. Mix all well in a dough.

  • Step 4 :

    Put the pan on stove, turn on flame to medium. Until then pour oil in a small bowl to grease your hands with it.

  • Step 5 :

    Take a small lump from the dough and start making long rectangular-shaped fingers.

  • Step 6 :

    Check if the oil is hot and then add prepared fingers to fry. Keep the flame medium high. Keep making and frying them in batches of 5-7.

  • Step 7 :

    Once done strain the oil by holding the handle over the edge of frying pan.

  • Step 8 :

    Take out the crispy finger, keep in a plate with tissue paper to absorb the excess oil. Repeat the process to make another batch.

  • Step 9 :

    Crispy semolina fries is ready. Serve with ketchup, mayo or any chutney of your choice.
