Ingredients

  • 45 gm green curry paste
  • 2 gm fresh red chilli
  • 15 gm refined oil
  • 1 gm kaffir lime leaves 5 gms pea aubergine
  • 20 gma aubergine
  • 3 gms jaggery
  • 150 gm coconut milk
  • 10 gm fish sauce
  • 2 gm fresh red chilli
  • 100 gm chicken stock
  • 10 gm sweet basil
  • 120 gms prawn

Step

  • Step 1 :

    Take a pan heat oil and saute the curry paste.

  • Step 2 :

    Once the curry starts leaving oil add 50 ml of coconut milk.

  • Step 3 :

    Add chicken stock and aubergine.

  • Step 4 :

    Add 100 ml of coconut milk and bring to boil.

  • Step 5 :

    Add jaggery and fish sauce.

  • Step 6 :

    Add prawns and bring it to boil.

  • Step 7 :

    Once cooked add basil, chilli and kaffir lime.

  • Step 8 :

    Ready to serve.
