Ingredients For Golgappa Chaat
- 1 cup Sooji
- 1/2 cup All Purpose Flour
- 1/2 teaspoon Cumin powder, roasted
- 1/2 teaspoon Red Chilli powder
- 1/2 cup Green Chutney, to taste
- 1/2 cup Sweet Chutney, to taste
- 1 sprig Coriander Leaves , chopped
- 1 sprig Mint Leaves, chopped
- 1 Potato, boiled and peeled
- 1/2 cup Kala Chana, sprouted and boiled (optional)
- 2 tablespoons Boondi
- Oil
- 2 cups Curd

- In a mixing bowl, blend maida, suji, and oil. Knead the mixture into a firm dough using water, ensuring thorough pressing. Cover and set aside for 15-20 minutes.
- Separate a guava-sized portion of dough, roll it into a circular shape, and use a small lid to cut out multiple round puris. Place the cut puris on a plate.
- Reuse leftover dough, repeat the process, and then roll out each puri thinner. Make them long or round – your choice!
- Heat oil to the desired temperature, then fry the puris in the order they were rolled.
- Carefully place a puri in the oil, gently pressing down. Once puffed, flip and add another. Continue adding 6-8 puris at a time, frying until golden-brown on all sides, adjusting heat as necessary. Remove the fried puris and place them on a paper towel to drain excess oil.
- Now place the chaat ingredients like aloo, sev, onion, dahi, and chutney individually into every puri to make the dish and enjoy.
