Ingredients

  • For Kachori Dough: 1 cup all purpose flour
  • 1 tbsp oil
  • 1/2 tsp salt
  • ½ cup lukewarm rater
  • For Filling: 1/3 cup gram flour (besan)
  • a pinch of asafetida
  • 1/2 tsp salt
  • 1/2 tsp red chili flakes
  • 1/2 tsp mango powder
  • 1 tbsp oil
  • For Garnishing 1 cup soaked moong dal
  • 1 cup chopped boiled potatoes
  • 1 cup whipped yogurt
  • 1/4 cup green chutney
  • 1/4 cup tamarind chutney
  • 2 chopped green chilies
  • 1/4 cup sev

Step

  • Step 1 :

    To make this scrumptious chaat, take a large bowl and mix flour, oil and salt. Using a little water, knead the mixture to a soft dough. Once done, cover the dough with a damp cloth and keep it aside.

  • Step 2 :

    Now, take out a small portion of the prepared dough and using a rolling pin, roll it into a small puri.

  • Step 3 :

    Heat oil in a skillet over medium flame. Once the oil is hot enough, add these puris in it and deep fry them until they turn golden brown.

  • Step 4 :

    Once fried, put it on napkin to soak the extra oil and make a small hole in the centre.

  • Step 5 :

    Next, stir fry soaked moong dal for a minute in one tsp ghee. Once fried a bit, turn off the flame and let it cool. When the dal is cool enough to handle, grind to a coarse mixture. Then, add all the filling ingredients into the grinding jar and grind them roughly.

  • Step 6 :

    Now, take a mixing bowl and add boiled potatoes in it along with moong dal mixture. Mix them with yoghurt, green chutney, tamarind chutney, chaat masala powder and chopped green chillies.

  • Step 7 :

    Then, fill the kachori with this mixture and garnish with hung curd, green chutney, sweet tamarind chutney, crushed papdis, sev and serve immediately!
