Roast the sabudana on a low flame.
Once it becomes crunchy and light brown which will take 30 minutes maximum on a low flame, remove from stove and let them cool down.
Then grind them to make a fine powder.
Next, roast the coconut for 3 minutes, browning is not necessary.
In the same pan where you roasted the coconut, add the sabudana powder and sugar and mix it well. Keep aside.
Heat the 5 tbsp oil in a small pan and then add the cashew nuts to fry them till the turn goldenish.
Now, take the mixture of oil and the nuts and mix it into the sabudana, coconut and sugar solution.
Add the nutmeg and powdered cardamom.
Taking a spatula stir properly and when it is still a little warm, start making balls.
Your laddoos are ready to serve!
