Come winter season and hogging becomes easy as the season whips up our appetite for all things sweet and savoury. Winter snacks such as fried sweet potatoes, chikki, til gud patti, pinni, gond laddoo and more. These snacks are not only tasty but also very nutritious.
Dry fruit gajak or dry fruit chikki takes the taste of this winter snack up by a few notches with the nutty taste of cashews, almonds, pistachios and raisins complementing the sesame seeds and jaggery. While you can buy this delicious winter snack from the shop, it is quite easy to make it at home as well. Here’s an easy recipe for it.
Ingredients Required:
- Til or sesame seeds: 1 Cup
- Ghee: 1-2 teaspoons
- Gud/Jaggery: 200 grams
- Dry fruits: 100 grams, finely chopped
- Peanuts: 50 grams

Method:
- To make dry fruits gajak, first of all place a pan on the gas burner
- Pour the sesame seeds in the pan and roast them for a while till they turn a bit brown
- When the seeds are properly roasted, spread them on a plate and allow to cool off
- Now, roast the dry fruits like cashews, pistachios and almonds plus peanuts on a low flame. Take care not to increase the flame or the nuts will blacken, leading to a bitter taste
- Remove the roasted nuts from the flame and pour the ghee into the pan. Add the jaggery and allow it to melt. Mix it properly so that it doesn’t stick anywhere in the pan. Keep doing this for 1-2 minutes
- When the jaggery or gud becomes warm, then add the roasted til or sesame seeds. Mix properly to avoid formation of any lumps
- Keeping the flame low, add the roasted dry fruits to this til gud mixture and mix properly
- Let this cook for 1-2 minutes
- Now take a flat plate and grease it with a few drops of ghee
- Put the mixture with til gud and dry fruits in this plate and spread it evenly
- When this cools off a bit, cut it into square or rectangular pieces as you wish
- Now let the til gud gajak cool till it reaches room temperature
Your Til Gud Gajak is now ready to eat!
Suggestion: You can easily store the Til Gud Gajak in an airtight container to keep it fresh so that you can eat it from time to time for a month.
