Unlike traditional onions, which have a stronger, tasty flavour, spring onions have a more grassy in nature. This makes them ideal for a light soup that won’t overpower your taste buds but will still leave you feeling satisfied. So here’s how you can make Spring Onion Soup at home:
How To Make Spring Onion Soup
1. Start by washing and finely chopping the spring onion greens. Peel and chop the onion, then wash and finely chop the green chili. Peel the garlic and ginger, then grind them together with the green chili to make a smooth paste.
2. Heat butter in a pan over medium heat. Once hot, add cumin seeds and a bay leaf, stirring for about 30 seconds to release their flavours. Add the chopped onion and saute until it turns light pink. Then, add the ground paste (green chilli, garlic, and ginger) and cook for another minute.
3. Stir in the spring onion greens and cook for about 5 minutes, mixing occasionally to prevent burning. This will allow the flavours to blend together nicely.
4. Pour in 3-4 cups of water, bringing the mixture to a boil. Let it cook for a few minutes, allowing the ingredients to meld.
5. Remove the pot from the heat and let it cool completely. Discard the bay leaf, then blend the soup mixture in a food processor until smooth. Strain the soup carefully.
6. Return the strained soup to the heat and cook for another 5 minutes. Season with salt to taste. Stir in fresh cream just before serving, and enjoy hot.
