Similar to Japanese curry but distinct from Indian or Thai curry, Korean curry rice is a staple in Korean households.

  1. To make Kare rice, you have to first cook the meat of your choice, pork, beef, or chicken nicely cut into small dice, over the stove. You have to cook them until the meat turns lightly brown.
  2. Add a variety of fresh vegetables like potatoes, onions, and carrots.
  3. Then, add some water and let this mix become tender on a simmer.
  4. Add the spices of your choice and a rich and aromatic Korean curry sauce for a flavourful and satisfying meal.You can easily prepare the sauce by boiling the Korean curry sauce powders, easily available in markets, in waterand in sweet rice wine.

Ingredients

  • Steamed rice to serve
  • 250 grams of beef chuck steak (or your choice of meat) - diced
  • 4 cups water
  • 3/4 cup water
  • to mix with the curry powder
  • 100 grams of Korean curry powder
  • 1 Tbsp sweet rice wine (mirin)
  • 2 Tbsp cooking oil
  • 200 grams of onion - peeled and cut into large cubes
  • 150 grams of potato - peeled and cut into large cubes
  • 120 grams of carrot - peeled and cut into large cubes
  • 70 grams of salted butter

Step

  • Step 1 :

    Marinate the diced meat pieces with sweet rice wine (mirin) and set it aside for 5 minutes.

  • Step 2 :

    Mix 3/4 cup of water with the Korean curry powder in another bowl until you have a smooth paste and bring the mixture to a boil.

  • Step 3 :

    In a preheated pot, add the cooking oil and sauté the onions until they turn golden brown over medium-high heat.

  • Step 4 :

    Add marinated meat and cook until it reaches a medium level of doneness.

  • Step 5 :

    Add butter to the pot and wait till it melts and evenly incorporates into the contents of the pot.

  • Step 6 :

    Add potato and carrot pieces, and 4 cups of water to it. Bring it to a boil over medium-high heat and then, let it cook for another 30 minutes, uncovered. Stir occasionally to prevent sticking.

  • Step 7 :

    Once done, add the curry sauce and stir it in until the curry thickens, which should take around 1 minute.

  • Step 8 :

    Serve it hot with steamed rice.

  • Step 9 :

    For side dish, pick from popular options like kimchi, radish kimchi, pickled radish, or refreshing pickled cucumber.

  • Step 10 :

    You can enjoy it with a glass of wine or soda.
