Ingredients For Methi Malai Matar Kofta

  • Boiled peas: 1 cup
  • Grated boiled potatoes: 1 cup
  • Grated paneer: ½ cup
  • Oil: 4 teaspoons
  • Amchoor powder: ½ teaspoon
  • Saunf seeds: 2 teaspoon
  • Green chilly paste: ½ teaspoon
  • Grated ginger: 1 teaspoon
  • Salt to taste
  • Dash of black pepper

For coating

  • Corn flour: ¼ cup or more
  • Bread: 3-4 slices
  • Bread crumbs: ½ cup

How To Prepare The Kofta

  • Heat oil in a non-stick kadahi on medium heat, add in the fennel seeds followed by ginger chilly paste.
  • Now add the boiled peas which have been mashed and cook them for a minute.
  • Add grated potato, grated paneer, amchoor powder, salt, pepper and mix all of them properly.
  • Add kasoori methi and cool the mixture. Roll the mix into koftas of round or oblong shape.
  • Heat a non-stick kadahi, add oil to it and heat it for frying the koftas.
  • Roll the kofta in corn flour + water mix, then in the bread crumbs and fry them till they turn golden brown.

  • Refined oil: 1 tablespoon
  • Chopped onions: 1 cup
  • Chopped tomatoes: ½ cup
  • Cashews: 5-6
  • Chopped green chilly: 1 small
  • Garlic cloves: 3-4
  • Grated ginger: 2 teaspoon
  • Methi leaves: 1 ½ cup
  • Milk: 1 and ½ cups
  • Heavy cream: 4 tablespoons
  • Garam masala: 1 teaspoon
  • Cardamom powder: ¼ teaspoon
  • Amchoor powder: 1 teaspoon
  • Cloves: 2
  • Peppercorns: 2-3
  • Bay leaf: 1
  • Kasoori methi: 1 teaspoon
  • Sugar: 1 teaspoon
  • Salt: To taste

How To Prepare The Gravy

  • In a bowl, rub washed methi leaves roughly with salt and keep aside for 15 minutes to remove their bitterness.
  • In a non-stick kadahi add the oil and then sauté chopped onions in it. Then add ginger, garlic and green chillies followed by the whole spices, tomatoes and cashews till they become tender.
  • Let this cool down and then blend it in a mixer to a smooth paste after removing the bay leaf.
  • Rinse the methi leaves to remove the salt and fry them in the kadahi with a little oil on low to medium heat for 20 seconds.
  • Add in the masala paste that you had prepared earlier followed by garam masala, salt and lastly, the milk, cream and sugar.
  • Let the gravy simmer for a while and then add the amchoor powder, cardamom and kasoori methi.
  • Let it cook for a while and check for the taste.
  • Remove from flame and add the koftas to the gravy before serving.
