As the holiday season approaches, many of you must be already thinking about the tasty and delicious meals you'll be serving to your loved ones. Christmas is a time for joy and spending a good time with family. There are plenty of easy main course recipes that will impress your guests on the occasion of Christmas without requiring too much effort and time in the kitchen. 1. Fish Molly
Ingredients For Fish Molly
- 500g white fish fillets
- 1 tbsp lemon juice
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp black pepper powder
- 1 tsp red chilli powder
- 3-4 slit green chilies
- 2 minced garlic cloves
- ½ inch-sized ginger piece (finely minced)
- 1 sliced medium-sized onion
- 1 cup thin coconut milk
- 1 cup thick coconut milk
- 2 sprigs of curry leaves
- 1 tbsp lemon juice
- 1 chopped medium-sized tomato
- 2 tbsp coconut oil
- Salt to taste
How To Make Fish Molly
1. Slice and clean the fish into pieces. For 10-15 minutes, marinate these with lemon juice, pepper, salt, and turmeric powder.
2. Add a little oil to a kadai or pan, then lightly fry the fish on both sides. Then set it aside
3. Pour oil into a different pan and turn the heat to medium. Add one by one the curry leaves, ginger, garlic, and green chilies, and saute them for one minute.
4. Add the sliced onions and cook, until they become transparent. Then add the pepper powder, turmeric powder, and thin coconut milk after that.
5. Put the cover on and cook the curry over medium heat for a few minutes. Once the oil begins to separate, turn down the heat to low and add the lemon juice to it.
6. After adding the fried fish and covering it with gravy, let the curry and fish combine thoroughly before bringing it to a boil. After adding the fish, spin the pan to combine the gravy instead of stirring.
7. Add the thick coconut milk and cook for at least 2 to 5 minutes over low heat, being careful not to let the dish boil.
8. Cover the pan with a cover, add extra sliced round tomatoes, and turn off the heat. Allow the leftover steam to cook the tomato. Then turn off the heat.
9. Serve with this fish recipe with some hot rice.
2. Hoisin Chicken
Ingredients For Hoisin Chicken
- 1 tbsp olive oil
- 1 kg boneless, chicken thighs (cut into bite-sized pieces)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sriracha (optional)
- 1 tbsp cornstarch
- 1 cup broccoli florets
- 1/2 cup chopped green onions
- 1 tbsp roasted sesame seeds, for garnish (optional)
How To Make Hoisin Chicken
1. Begin by heating the olive oil in a large skillet or wok over medium heat. Then add the chicken and cook for 5-7 minutes, or until browned, stirring occasionally. Season the chicken with salt and pepper.
2. In a small bowl, whisk together the hoisin sauce, soy sauce, honey, and sriracha, if using.
3. Add the sauce to the pan with the chicken and cook for 2-3 minutes, or until heated through.
4. In a small bowl, whisk together the cornstarch and water to form a slurry.
5. Add the slurry to the pan and cook for 1-2 minutes, or until the sauce is thickened.
6. Stir in the broccoli and cook for 3-4 minutes, or until tender-crisp.
7. Remove from heat and stir in the green onions.
8. Garnish with sesame seeds and serve it with fried rice.

3. Baked Ricotta
Ingredients For Baked Ricotta:
- 2 cups ricotta cheese
- 1/2 cup shredded mozzarella
- 1/2 cup grated parmesan
- 2 tablespoons olive oil
- 4 minced cloves garlic
- 1 tbsp chopped fresh thyme
- 1 lemon, zested and juiced
- 1 tsp kosher salt
- 1/2 tsp red pepper flakes

How To Make Baked Ricotta:
1. Set the oven temperature to 425 degrees Celsius. Apply cooking spray to a small baking pan or casserole dish and put it aside.
2. Toss together the ricotta, half of the mozzarella and parmesan, olive oil, kosher salt, garlic, red pepper flakes, and thyme in a large bowl. Once the baking dish is ready, spread the mixture into it and sprinkle the remaining parmesan and mozzarella cheese on top.
3. Bake until the ricotta gets bubbly and heated, for roughly 10-20 minutes. Put the cheese on the grill for a minute or two, or until the top is golden in colour, to brown it.
4. Once it is done, take it out and it's ready to serve.
