To make crispy dhaniya pakodas, chop a big bunch of coriander or dhaniya leaves. Put the chopped leaves in a bowl and mix them with 1 cup besan, turmeric powder and chilli powder as per your taste, paste of 2-3 garlic cloves and some crushed ajwain seeds. Add a little water plus some hot oil so that the batter is thick and not runny. Heat oil in a kadahi for deep frying the pakodas and fry them till golden brown. Serve hot with ketchup and some adrak chai.
Thattai-The Crispy Rice Crackers Of The South

Thattai, also called Nippattu and Chekkalu, is a south Indian snack that has both sweet and salty versions. You can easily make it at home by combining 1 cup rice flour, salt (as per taste), hing (a pinch), 1 tbsp til seeds, 1 tsp chana dal, ½ tsp ginger, 1 finely chopped green chilli, 2 tsp oil and water to make a firm dough in a bowl. Divide the dough into 30 pieces and flatten them with a belan. Heat oil in a pan on medium heat and fry the flattened dough pieces till they are light brown. Take them out from the oil and drain on a tissue paper. After the Thattai cools down, you can store the pieces in an airtight box.

A staple street food and chai time snack of Bengal, aloo kabli is a very nutritious combination of potatoes with chickpeas and other ingredients. Soak 50 gms kabuli chana, white chick peas or Bengal gram in water for an hour and pressure cook it with salt. Boil potatoes, peel off the skin and dice them into little pieces. Chop onions, tomatoes and dhaniya leaves and add them to the diced potatoes and boiled chana. Add salt, chilli powder and lemon juice as per taste. Your tasty and filling tea time snack of Aloo Kabli is ready.

Instant Bread Dhokla-A Western Inspiration

Making a proper Gujarati Khaman Dhokla may take time so you can ditch that to make instant bread dhokla instead. To make this, just take a few bread slices and slice them into 4 squares. In a shallow pan, heat ghee and add some mustard seeds and curry patta. Fry the bread pieces lightly and set them aside. Stack two pieces together for that dhokla look. Now boil water in a pan, add sugar, lemon juice, a few green chillies and a pinch of salt to it. Pour this over the dhoklas and enjoy.
