Diwali is just around the corner and we are all excited to dress in our ethnic best and gorge on delicious sweets. However, health concerns should always remain a priority. But this doesn’t mean that you should miss out on delicious sweets during the festive season. So, here are a few recipes byChef Yousaf Ali, Head of Product Innovation, Floryo that you can enjoy guilt-free.
Ragi & Oats Ladoo
Ingredients
- 100% Whole Ragi Flour - 1.5 Cups
- 100% Whole Oats Flour - 1 cup
- Dates - 20
- Milk - 1/4 Cup
- Honey - 1/2 Cup
- Ghee - 3 Tbsp
- Green Cardamom Powder - 1 Tbsp
- White Sesame Seeds - 1/4 Cup
- Coconut Powder - 1/4 Cup
- Cashew Nuts - 12
Preparation
- Dry roast the oats lightly and grind them in a mixer.
- Remove the seeds from the dates and blend 15 of them with the help of milk in a blender into a paste.
- Cut the remaining dates into small pieces.
- Dry roast white sesame seeds.
- Dry roast cashew nuts.
Instructions
- Take 1 tbsp (14gm) of ghee in a pan and roast the fresh whole oats flour on low flame for 3-4 minutes.
- Heat the remaining ghee and roast the fresh whole ragi flour, until its rawness is removed, on a low flame.
- Mix the oats flour in the ragi flour on a low flame.
- Now add the dates paste them into the flours & mix it well.
- Add half of the honey.
- Add cardamom powder. Keep it on low flame for 2-3min & stir.
- Take the mixture out of the stove and let it cool for 4-5min
- Now add the pieces of dates & honey and mix them well into the dough.
- Take some dough and put it in cashew and make it in the form of ladoo.
- Mix the sesame seeds into coconut powder & roll the laddoo in this mixture for coating.
Phirni
Ingredients
- 100% Premium Rice Flour - 2-3 Tsp
- Milk - 250ml
- Almonds (Chopped) - 2 Tbsp
- Pistachios Chopped - 2 Tbsp
- Green Cardamom (Crushed) - 2 q
- Sugar - 1 1/2 Tbsp
Instructions
- Soak the rice for about two hours & then wash the rice and drain the excess water.
- Grind the soaked rice. Make a grainy paste.
- Heat the milk in a saucepan on medium flame & bring it to a boil.
- Add rice and allow it to cook on low flame, till the milk is reduced to half and the rice is completely cooked.
- Meanwhile, Finely chop the almonds and pistachios.
- Add sugar and cook for another 5-7 minutes. Keep stirring for better consistency.
- Once the phirni acquires a pinkish hue, add the cardamom powder and remove it from the stove.
- Mix it well & garnish it with nuts.
- Allow it to cool before serving.
Mysore Pak
Ingredients
- 100% Whole Chana Besan - 70 gm
- Sugarfree - 200 gm
- Water - 95 gm
- Ghee - 90 gm
- Oil - 45 gm
Instructions
- Add 40gm of ghee to a pan and heat it over medium flame.
- Once the ghee is sufficiently hot, add besan (gram flour) in it and roast it for 4-5 minutes, Roast the besan (gram flour) till it turns golden brown.
- In another pan, boil the water & add sugar-free, Stir it till it reaches one string of consistency.
- When the syrup is prepared, add the fried besan in it and stir well till it thickens.
- Heat the remaining ghee and gently add the gram flour mixture. Keep stirring continuously so that no lumps are formed.
- Stir and pour into a greased plate. Gently spread the mixture and allow it to cool.
- Before it hardens fully, slice it into desired shapes. Store in an airtight container and serve with a sweet smile.
