Pineapple Halwa
Talk about North Indian desserts and the one thing that will surely come to your mind is halwa. And what else could be better than this pineapple halwa to treat your loved ones!
Ingredients
- 1 medium-sized peeled pineapple
- 1 ½ cup semolina
- A few saffron strands
- 4 tablespoons ghee
- 1 tbsp finely chopped almonds for garnishing
- ¼ cup khoya or mawa
Directions
- Heat a non-stick pan, add sugar and water. Stir it continuously until the sugar dissolves.
- Add chopped pineapples to the pan, saffron and cook on low heat.
- Heat ghee in another non-stick pan. Add semolina and mix on medium heat till light golden.
- Add almonds and cooked pineapple along with the sugar syrup and mix well. Cook till semolina is cooked.
- Add khoya and cook for 2 minutes more.
- Transfer into a serving bowl, garnish it with almonds and enjoy!
Eggless Pineapple Pastry
Nothing can replace a classic pineapple pastry! Try this recipe and you will get an incredibly delicious, creamy and sinful dessert to indulge in!
Ingredients
- 2 cups flour
- 1 ½ tsp baking powder
- ½ cup butter
- 1 ½ cup powdered sugar
- A ½ cup of water
- ¾ cup yogurt
- 1 tsp vanilla essence
- ¼ tsp salt
- 2x9 inch round or square cake tins
For Layering
- 1 cup chopped pineapple
- 3 cups cream
- A ¼ cup of sugar
- Cherrie and pineapple slices for garnishing
Directions
- Sift the flour and baking powder and transfer into a mixing bowl.
- Add the salt, sugar, butter, water, and vanilla. Beat the mixture with an electric mixer or a whisker.
- Add the yogurt to the cake batter and beat it until it looks fluffy. Transfer the batter into the prepared tins.
- Bake for about 20-25 minutes at 160-degree Celsius,
Prepare the layering
- Whip the cream with the sugar, till it holds shape.
- Be careful not to over beat, as it will turn into butter.
- Place one sponge on the plate upside down, and spread the chopped pineapple over it in a layer.
- Spread a layer of cream over this and cover with the second sponge, upside down.
- Now cover the cake with a layer of cream. Garnish with the pineapples slice and cherries and serve!
Caramelized Pineapple Sundae
Getting a craving for a tropical escape? This super simple recipe will whisk you away in no time! Ice cream is nice but drizzling the sauce over salted caramel ice cream and taking a bite is just pure paradise.
Ingredients
- ¼ cup butter
- A ½ cup of sugar
- 1 fresh pineapple, peeled and cut into ½ inch cubes
- 3 scoops of vanilla/ chocolate ice cream
- ½ cup flaked coconut, toasted
- ½ cup chopped nuts
Directions
- Heat butter in a large container. Add brown sugar in it and sit continuously.
- Now add pineapple; cook and stir until tender. It’ll take approx 10 minutes.
- Remove pineapple with a slotted spoon and set it aside.
- Bring remaining juices to a simmer and cook until it thickens.
- After 5 minutes, take it off from the heat.
- Layer pineapple and ice cream into dessert dishes and sprinkle coconut and nuts on it. And enjoy!
