Let’s take the comfort and indulgence of the humble Chicken Tikka up a notch with the luxurious touch of the rich and creamy marinade, Malai, infused with some spices and yoghurt. Try this Chicken Malai Tikka recipe and give your taste buds a trip through the taste of the streets of India.
The recipe for making Chicken Malai Tikka basically consists of two processes, marination and grilling. First, wash the chicken breasts and pat them dry. Cut them into long strips into one-inch wide pieces. Or, you can also use pre-cut cubes of chicken, it’s totally up to you. Transfer the cut chicken pieces to a mixing bowl and add salt, black pepper powder, ginger paste and garlic paste, to taste. Use a spatula to mix them well together so that each piece is coated with the spices and other ingredients. Leave it be for around 30 minutes and meanwhile, mix hung curd, fresh cream, Garam Masala, Kasoori Methi, chopped green chillies, white pepper powder and salt together in another mixing bowl using a whisk. Make sure there is no lump left in the curd. Now, add some cornflour and freshly chopped coriander leaves to your second marinade and mix thoroughly. Pour the two mixtures into one and mix them well together for the best taste.
Use a cling wrap to cover the bowl and refrigerate for four hours minimum to let the flavours build. After that, thread the marinated chicken cubes on a bamboo skewer and leave a gap of one inch at the top and the bottom of the skewer. Brush some melted butter on a non-stick pan and heat it. Reduce the heat to medium after the pan is hot and place the skewers with the marinated chicken cubes on it. Make sure not to overcrowd the pan so that the chicken doesn’t directly get in touch with the chicken and it cooks evenly. You have to cook the chicken for about 10 minutes and then, brush the top side of the chicken cubes with melted butter and flip them over. Cook the other side for eight more minutes on medium heat and serve them hot on a side of chutney or lemon wedges and enjoy!

Here is an easy recipe to prepare Chicken Malai Tikka at the comfort of your home.
Wash the chicken breasts and pat dry with paper or tissues.
Cut them into even-sized cubes and transfer them to a mixing bowl.
Add salt, black pepper powder, ginger paste and garlic paste, mix them together, and set it aside for 30 minutes.
In another mixing bowl, add hung curd, fresh cream, Garam Masala, Kasoori Methi, chopped green chillies, white pepper powder and salt, and mix them well with a whisk.
Then, add cornflour and freshly chopped coriander leaves, and mix the two prepared mixtures in one bowl.
Mix them well and cover with a cling wrap. Refrigerate it for a minimum of four hours.
Heat a non-stick pan and add some melted butter. Arrange the marinated chicken on skewers and cook them on medium heat for about 10 minutes.
Brush some melted butter on the other side and flip the skewers. Cook for another eight minutes.
Serve them hot with chutney or lemon wedges and enjoy!
