While many think that it can be hard to make, the fact is, cheesecake is one of the easiest desserts to prepare. And since the cheesecake day is just around the corner, we are sharing a simple recipe of preparing it, that too in a pressure cooker. So, even if the nearby bakery shops are closed, you can satisfy your sweet tooth without a hitch!

Ingredients

  • 2 ½ tablespoon melted butter
  • 3-4 cups biscuit crumbs
  • 5 tablespoons sugar
  • 1 ½ tablespoon all-purpose flour (maida)
  • 2 tablespoon cream
  • 1 cup cream cheese
  • 2 egg yolks
  • fruits to garnish.

Step

  • Step 1 :

    Begin by making the crust for the cake. Take your biscuits and grind it into a dry powder in a blender.

  • Step 2 :

    Take a flat pot, place parchment paper at the bottom.

  • Step 3 :

    Put the crumbs in the bowl, add butter until it is moistened.

  • Step 4 :

    Gently press the mixture along the bottom. Freeze while you prepare the filling, at least 10-15 minutes.

  • Step 5 :

    In a pot, combine the sugar, flour, cream, and cream cheese. Beat well, using a whisk.

  • Step 6 :

    Then add egg yolks and keep mixing until the batter is smooth.

  • Step 7 :

    Pour the batter over the crust.

  • Step 8 :

    Then, add 2 cups of water in the pressure cooker and preheat it.

  • Step 9 :

    Place a steel rack at the bottom of the cooker and keep the pot over it.

  • Step 10 :

    Close the lid and let it cook for 20 minutes.

  • Step 11 :

    Remove the cake from the pressure cooker and let cool for around 1 hour.

  • Step 12 :

    Cover and refrigerate for 4 hours or until completely chilled.

  • Step 13 :

    Pass a knife to check if it is cooked, or place in the refrigerator for another 30 minutes.

  • Step 14 :

    Serve with fresh strawberries or chocolate.
