Fusion food is a marriage of different cuisines served on a platter which needs you to be open-minded while tasting. It brings together spices and cooking techniques of different cultures to make a fine blend which can truly amaze you. Like we Indians make Chinese food, which is miles away from the real Chinese dishes and is also called Chin-jabi (Chinese-Punjabi) food with our own twist of spices and sauces and gravies for that matter. The French toast we make is not at all like the French toast made in France. So to give a clearer picture on the beauty of fusion food, I. MasterChef Shipra Khanna will explain what exactly it is and how I use this concept will my culinary creations. Also, stay tuned for a bonus fusion recipe that will blow your mind!
Most people say “fusion is confusion”. In fact, this has become a little joke that has made circles in the chef groups. In my opinion, however, I prefer that a fusion diet is better than having an authentic dish. Yes, there is the idea of keeping the core of a dish the way it is supposed to be, but on the other hand wouldn’t you want to know how you can include two cultures to make it a better, completely different experience than the one you have had all this time?
One of my favourite restaurants has an array of Indian dishes that have been deconstructed into modern structures and make it more fun to experiment with.

In fact, a lot of my dishes from Sinfully Yours, would be easy to achieve. They are even palatable to tastebuds across the world, truly bringing the fusion in flavour.
It is a great way of tapping into your culinary heritage by using modern methods to make something seemingly mundane into completely new and special dish.
This is not just because of the international influence that exists and has increased over time. As we have gained more insight on the different cuisines that exist around the world, we want to find a way that we could experience the same things but with a palette that would suit ours. For example, if we were to create a white sauce pasta in our household, the flavours would remain just as creamy but the intensity would be way more heightened because the Indian taste palette isn’t as sensitive thanks to our spice-laden dishes.

As we go back to our roots to experience more of what we used to have in our culture, it is important for us to remember that it is these fusion dishes that make food so exciting and help different cultures meet each other at a neutral ground, ready to be loved by all.
