Salmon With Creamy Dill Sauce

Ingredients:
- 2 Pounds of salmon fillet
- 1 to 1-1/2 teaspoons lemon-pepper seasoning
- 1 teaspoon onion salt
- 1 onion, sliced and separated into rings
- 6 lemon slices
- 1/4 cup butter
- 1/3 cup of sour cream
- 1/3 cup of mayonnaise
- 1 tablespoon of chopped onion
- 1 teaspoon of lemon juice
- 1 teaspoon prepared horseradish
- 3/4 teaspoon of dill weed
- 1/4 teaspoon of garlic salt
- Pepper to taste as per preference
Recipe:
- Place a heavy-duty foil on a baking pan and grease lightly. Place salmon skin side down on foil followed by sprinkling with lemon pepper and onion salt. Top with onion, lemon and butter. Now fold the foil around the salmon and seal tight.
- Bake the salmon skin at 350° for 20 minutes. Open the foil carefully, allowing steam to escape. Broil it on medium-flame heat for 3-5 minutes or until the fish flakes easily with a fork.
- Combine the sauce ingredients until the salmon smoothens.
- Serve hot with salmon.
Orange Soy Salmon with Rice

Ingredients:
- 2 cups of cooked rice
- 4 salmon fillets
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 tablespoons orange juice
- 6 tablespoons soy sauce
- 1 teaspoon sesame oil
Recipe:
- Take a large skillet coated with cooking spray. Add salmon, and sprinkle it with salt and pepper. Cook the salmon over medium heat until the fish starts to flake easily with a fork.
- Remove the salmon and keep it aside. Add orange juice and soy sauce to the skillet; cook over high heat thickened slightly. Stir in sesame oil then spoon over salmon.
- Serve hot with cooked rice.

- 6 Ounces of baby spinach
- 6 teaspoons canola oil
- 4 tilapia fillets
- 2 tablespoons of lemon juice
- 2 teaspoons of garlic-herb seasoning mix
- 1 large egg, lightly beaten
- 1/2 cup of part-skimricotta cheese
- 1/4 cup of grated Parmesan cheese
Recipe:
- Preheat the oven to 375°. Take a large nonstick skillet and heat 4 teaspoons of oil. Add spinach and cook until wilted. Meanwhile, place tilapia in a greased baking dish, drizzle with lemon juice, and 2 teaspoons of oil and sprinkle with seasoning blend.
- Take a bowl and combine the egg, ricotta cheese, spinach and sprinkle with parmesan cheese.
- Bake fish in the oven for 15-20 minutes until it begins to flake easily with a fork.
- Combine everything together and serve with lemon wedges and additional parmesan cheese.
